My Dad and I used to make home made mince meat (the real kind - took all day to make), peach ginger conserve (yum), and a special tomato salsa (lost the recipe - damn) and it was wonderful. My neighbor grows fabulous tomatoes every year and she blesses me with her garden largess for my homemade pasta sauce. Boiled jars. Processing in the water bath - the whole nine yards.

And in the middle of winter? When the only options are store bought sauce? I have my little jars of nirvana.

But I don't make that tomato sauce in a white silk blouse. Just sayin'.

SHE did it (after having served as an Army nurse in Europe during WWII,) from their home in CT (the 'country' to us; we lived in apartment in Brooklyn!)

when I have enough to can. This year is a bit bleak but if I can get some good stuff from a farmers market next month I will get it done. Our farmers market does not make the sellers wear masks so we have to go elsewhere about 30 miles to get what we need if we need it.

any of those products.

And in the general theme of this thread, I can:

Hood strawberry jam (No pectin, small batch)
Blueberry jam (no pectin, small batch)
Pear vanilla sauce (thicker than syrup but not quite as thick as jam)
Applesauce
Pickles
Pickled jalapeños slices

I generally freeze my romas but I’m not opposed to canning tomatoes. This year I may have to as my freezer is quite crammed full.

Especially now that he's on a no salt diet. Because store bought chicken broth and tomato sauce is loaded with salt, we can a bunch of that.

We always had a big garden and she would can tomatoes for sauce, and other fruits and veggies. She also made her own jams & jellies, mustard, pickles, and froze a lot of garden vegetables and fruits as well so that we had "fresh produce" year round.

I'm not quite as domestic and I would have no place to store any of that stuff, but I do like to cook.

i found draught cucumbers make better pickles. i have made strawberry jam. last year i made crab apple jelly. want to 'can' some tomatoes this year. cherry toms. make my grandma's lodi/transparent applesauce religiously. lumpy. eat semi frozen. still making rhubarb tarts. may try picking some. in water in fridge seems to fix the bad.

I call it preserving.
I remember people calling it “putting up” tomatoes, jam, etc.
