It would also take a lot less time to cook the damn thing.
The juices from the bottom could be basted in to the meat of the thing too!

It makes for a more even distribution of heat, so for many instances of cooking it is great.

Not that I would do it, Turkey for Thanksgiving is not meant to be mutilated that way.

I just learned that word too (from the NY Times a few weeks ago?) and I'm dying to spatchcock something - just to be able to say the word over and over again...
