...red beans and rice were typically served on Monday since the "boiling pot" was already fired up for doing the family's wash. No sense sweating to death two days in a week!

(I spent a good bit of my childhood in New Orleans - Laissez les bons temps rouler indeed!)

One of the few blemishes on the fair face of Louisiana cuisine is the almost total lack of fresh veggies. Boiled? Sure! Onions, bell peppers and celery form the "Holy Trinity" of Cajun cooking. Okra may even be fried! But just try to find a decent salad down there. You'll be as SOL as Mom was the day she wandered the streets of New Orleans' central business district, across Canal from the French Quarter, in search of a cup of decaf coffee.
