Celiac disease issue:

Accidentally ingested 2 slices of gluten crust pizza (thought it was gf).
8 days later still have gas and bloating if I eat raw vegetable (celery stick) or dark chocolate.
Normally these foods cause no problem in moderation.
Anyone else have similar experience.

so it's going to take some time to heal. After eating so much gluten at a sitting, this seems like a pretty normal response.

Celiac is life threatening. Whoever told you that pizza was gluten free should be tied up in a sack and hit with baseball bats.

and whoever told you that a gluten pizza crust had no gluten in it should be tied into a sack and beaten.

You have been eating other things, right?

Celery is mostly water.

I tried eating some salad a few days ago and same thing happened.
It could also have been emotional as it didn't bother me until the next morning
and I was upset at something in the morning.
