What's for Dinner, Mon., Mar. 3, 2021

Crostini with pepper topping.

Meatballs and tomato sauce.

Iceburg slices with ranch-peppercorn dressing and goat cheese.

No dessert. Nuttin' in the house for sweets.

on edit: I stopped at a grocery store for cat food and got a couple Ben & Jerry's toffee/vanilla. Now the trick is to hold the portion size to a couple tablespoons.

1. For dinner: Jamie Oliver's puff pastry sausage roll.

Kale ceasar salad on the side with homemade sourdough croutons.

4. love Jamie Oliver

He does a lot of work with kids and nutrition. He had a series on television where he went to a state with high obsesity. I will never forget how he filled an entire school bus with the amount of sugar in the chocolate milk the school cafeteria served the kids over a semester.

I have one of his cookbooks--need to dig that out.

5. I've got a nerd girl crush on him.

I got his 5 ingredient cookbook last year and itís a staple in my kitchen. Thatís saying a lot because I donít buy cookbooks anymore.

2. We are having chili tonight.

My favorite Ben and Jerryís is Coffee Toffee Bar Crunch. If it is in the house I will eat the entire pint. I feel guilty for days. Now you know why it is never in the house.

3. Little open-faced bacon and cheddar sandwiches

(the only bread I have is a very skinny baguette lol) and salad. My rosemary plant is still kickiní on the deck, so I crumbled some into the salad. Tasty.

Drinking coffee because itís windy and chilly here and I donít have to get up early tomorrow.

For dessert: tapioca pudding

6. Stuffed Eggplant Balls

From The Italian Vegetable Cookbook. https://www.amazon.com/Italian-Vegetable-Cookbook-Favorite-Antipasti/dp/0547909160

It was a little labor-intensive but well worth it. And I usually shy away from fried foods.

You cook a medium halved eggplant in water, let it cool, then press out any liquid. Then you chop it finely and add to a mixture of egg, Romano Cheese, bread crumbs, parsley, salt & pepper. You mix well and then form into balls about the size of a handball, maybe a little smaller. Make a well and insert a cube of smoked mozz. Then you roll the balls in more breadcrumbs.

I had the balls in 2" of oil for about 5 minutes tops and let them drain on paper towels.

You serve them with Marinara Sauce.

And yes, I'd do it again.

BTW, I think I ate half the recipe.

7. Leftover pasta and meatballs from Saturday

With a fresh salad. I made a red wine EVOO vinegrette to go with it.

I had one chic chip cookie ice cream sandwich left. Having that now. Idk how that stayed in the freezer so long!
