What's for Dinner, Sun., Mar. 14, 2021

Pork schnitzel. Baked, though, so no golden crust.

Vegetables in tomato sauce: potatoes, onion, yellow pepper, squash.

Tossed green vegetable salad with apricot balsamic vinaigrette.

Cannellini salad: parsley, red onions, celery.

Dessert: coffee and banana nut bread.

..and it looks exactly like the no crust Keto friendly pizza I get from Papa Murphys! Adding a not so Keto friendly garlic knot, green salad and of course PIE for dessert cuz its Pi Day

Meats men in the crock pot with 2 bottles of Smithwicks since late last night, veggies went in at noon. Smells amazing.

Irish soda bread in the oven.

Early St Patrick’s day here.

I am the cook and my wife is the baker. I get to peel everything and toss it in the crock pot, my wife, the more skilled of the two of us, makes the sofa bread. It is amazing

I am a 1 onion, 1 turnip, 1 head of cabbage, dozen potato’s and 2 or maybe even 3 bags of carrots kind of guy, soak and scrub the potato but chop with skin on for the pot. Peeling the carrots is easy, but the turnip sucks.

Last year the corned beef was easy to find, this year it took trips to 3 stores before finding it ( somewhat pricy) at Wegmans, but I got two 3 pound point cut briskets and will make a little hash tomorrow morning with the potato and beef, a couple eggs and I will not be hungry until dinner.

super 'pig out'. I ended up eating the entire rack of ribs...didn't save any for another day. I was not feeling well this morning either!
