Chorizo-stuffed red pepper. Has lots of cheddar over the top as well as a little tomato sauce. In addition, I chopped cilantro and green onion to put over the top. And a chipotle pepper!
I made these a couple days ago but didn't cook all of them because I wanted an easy dinner for days when I've been planting.
Cucumber salad.
Dessert: lemon meringue pie and Earl Grey tea.

(9,852 posts)Thinking about Punjabi rajma in the instant Pot, with rice. (That's kidney beans, with onion masala). Either that, or mixed dal. It's cold, and that just sounds good.

Perhaps a red wine to accompany, not sure yet.

(4,889 posts)The final pizza turned out to be not quite 100% vegan. We ran short on vegan cheese and had to add some mozzarella we had leftover from a tomato and mozzarella side we made a few days ago.
The crust was from a GF pizza dough from Trader Joe's; recommend using a baking stone and par baking the crust by itself for about 8-10 minutes before putting on the toppings. End result was a very crispy crust from start to finish on each piece. Mrs Best took a picture of the ingredients and is going to try and back-engineer the GF dough. We've tried some GF dough recipies from King Arthur and other food websites, but the Trader Joe's GF dough has outperformed them all both in ease of preparation and taste.

(38,601 posts)Essentially cabbage and fresh chorizo and tomatoes all stewed together. (Not made into cabbage rolls. Tastes the same!)

(38,452 posts)on reruns a couple of years ago. Instead of individual stuffed rolls, she layered the cabbage and the meat filling in a bowl (as well as a some tomato-y broth), and baked it in the oven. I've always wanted to try it that way. Seems a lot easier than making a bunch of rolls.

(38,452 posts)Between Al's surgery this morning, and Cuddles' surgery tomorrow (thank goodness she's going to be spayed), we're keeping it pretty simple over the next couple of days.
Pizza will have sausage, onion, broccoli and extra cheese.

Texas-styled fried chicken in Grandpa's cast iron pan. You have to put a small dollop of bacon grease in the frying oil. (I know it's not good for me but it's a twice-a-year indulgence.) The Landlady(!) chopped up a whole chicken so there's going to be a few meals and snacks from this batch.
Mashed potatoes with a homemade gravy sprinkled with chopped up chives.
Spinach salad with sliced mushrooms, crumbled bacon (guess where we got the grease!) and cherry tomato halves with a very light vinaigrette dressing.
Ginger snaps and brandy for desert.

Biscuits 'n' gravy will make a delicious breakfast later on.
