What's for Dinner, Sat., April 24, 2021

Barbecue pork sandwiches (pulled pork) on Brioche rolls.

Coleslaw.

Cauliflower puffs. Have cheddar cheese, scallion in them.

Dessert: ice cream bar: salted pretzel vanilla covered with chocolate.

Raspberry lemon ginger kombucha to drink.

2. a new to me "cooking sauce mix"

jasmine rice & chicken cubes in Panang Curry Sauce.
I'll stir fry some onions and a red bell pepper, chop up some peanuts to top the rice bowl.

4. "Whatever" Soup!

storm blowing in to the Sierras and snow forecast for tonight...

Pulled out everything remotely interesting in the fridge,

had some chicken broth...

potato, yellow pepper, red onion, carrots, mushroom, a few cloves of garlic and some small cherry tomatoes I had frozen for sauce...

threw in a half spice packet from some rice pilaf


I have NO idea what is going to happen! It's boiling now! LOL
I may have some cornbread mix in the cupboard, either that or I'll pick up some instant biscuits.


If all else fails, I have pizza from last night

9. Spring is having a hard time

getting to Colorado so I made soup too. Chicken, corn, potatoes, carrots, green bell peppers, onions, cream. Probably be my last for a while since they're forecasting 70 for next week.

What elevation are you? Im at 6000' so we typically have a few storms thru June...

12. I'm at mile high

in Boulder. It's been a crazy year, lots of snow and cold through April with a few days of good Colorado sun and been great for skiing if you can get there. We need that moisture so much and I'm sure you do to. Praying we (and you) won't have the terrible fires we had last year but it's still drought in southwest CO. Everyone wants to get out to the mountains and so we have to have reservations for all campgrounds and just to get into the parks. Lots of friends and families want to get to CA also. Hope you have a good summer.

5. I made barbecue pork sandwiches also. I forgot the coleslaw sadly.

I made a nice salad though with ranch dressing and many different vegetables...Ice coffee to drink. I have coconut macaroons for dessert.

7. Navy bean soup

TJ is off to the night shift at the medical center and it is chilly and raining.

Dinner is leftovers. Bean soup from yesterday with a dollop of sour cream and several dashes of Tabasco sauce, some leftover cabbage and a half of a baked sweet potato.
Klondike bar (no sugar added) for desert.

FLFC didn't join me, choosing a nap instead. I don't think he has realized TJ left. He ate Moist and Meaty dog food, chicken temptations, and some beef (steak umms) this afternoon. He kept asking for more, but declined everything until I offered a spoon of peanut butter.
