I'm going to try an open pit BBQ this summer instead of

the off-set steel smoker. I'm gong to try a smaller version, 4'-0 x 4'-0±. I have all the material laying around.

1. Looks like a lot of bending over for small stuff.

I can see an open pit for slabs, joints, sides, the whole lamb or pig.

2. Pretty neat.

I use a Weber smoky mountain and I have a really cool “Cajun microwave,” which doesn’t smoke the meats but creates beautifully high heat with the coals on top, out in the open.

Look forward to hearing how it works out!

4. That looks like a big PITA to me ... love my Weber Kettle

But I guess if you need a lot of space and this is the only way to get it ...

Let us know how it works out if you do it though.
