What's for Dinner, Mon., June 14, 2021

Small stuffed peppers. Stuffed with tomato sauce, ground beef, chopped zucchini and summer squash, carrot, garlic, and mustard spinach. A few will be stuffed with ricotta, spinach, and garlic. Topped with grated parmesan, melted of course.

Tossed green salad with sesame miso dressing. Just a few veggies: cucumber and scallion.

Dessert: strawberries over angel food cake with whipped cream on top.

Cold coffee to drink.

We are going to a local baseball game at 6:00 so we’ll be hitting up the concession stand!
I’m hoping for some pork bbq.

I'm making big salads topped with smoked chicken breasts topped with chipotle compound butter. Grilled olive oil baguette on the side.

However, I got my recipe from one of my e-cookbooks which was difficult to copy, so I had to do a Windows snip of the recipe. Meaning I can't cut and paste it.

I'm going to look around and see if I can find a copycat recipe of it and I will post back to you sometime in the next day or so.

Veggie sauce with red bell, poblano (both fire roasted), fresh tomato, onions, sauteed in garlic, butter & olive oil. Spiced it up with fresh oregano, basil, & parsley, ground cayenne, salt, pepper, & thyme. (My thyme plants aren't mature enough yet.)
Added pinot noir & lemon, then some raw sugar & grated parmesano once reduced. Then added a small can of tomato sauce.
Served over bucatini.

Been an eventful 24 hours. Cut my watermelon with a short knife because long one was producing curved output, the slice wound up on the floor. But at least I wasn't sliced. Whew.

Marinated chicken stir fried with random vegetables from the fridge and served with rice. It’s my fallback position when I have no idea what to make for dinner.

Used black beans instead of refried and topped it with green onions, sour cream, and tortilla strips. It was pretty good and easy to make.
