A bangin' Green Bean Casserole *DU Warning: includes cornflake crumbs*

This is very nearly identical to a recipe I used to have but lost on a move many years ago (it was in a notebook of written down recipes. I still miss that notebook. *sob* )

Same ingredients, but I made mine slightly differently- more like making a béchamel sauce for homemade mac and cheese but with sour cream substituted for the milk. It’s damn tasty.

I’d cook the onions in the butter till translucent, then add the flour to make a roux. Once the flour is properly cooked, add the sour cream to act as the milk. Once it’s blended smooth, add fresh, blanched green beans, swiss cheese, and seasonings.

I also put a light layer of just grated swiss on top of the beans, then topped that with a mix of cornflake crumbs and those crunchy French’s onions (about 75/25 mix).

The main point is no can of soup, but an easy to make, yummy sour cream and swiss cheese sauce, instead. It makes a HUGE difference.

We liked it so much it became a year-round, regular side dish for a few years. Don’t know why I stopped making it? It’s pretty darn tasty, I hope you like it!
