What's for Dinner, Mon., Mem'l Day, May 29, '17

It's a gloomy day here, overcast and rainy, so I'm making a chicken pot pie. I'm using an Ina Garten recipe but a pie crust from the store to make the process easier and faster.

I'm also making a salad with red and green lettuce from my garden. And a homemade dressing, too: French dressing. I was able to get baby Persian cucumbers from the market this a.m., so they will be a part of this salad, too.

To drink, lemon balm tea, which I also made from lemon balm from the garden. I love this tea. Lemon balm is from the mint family. I think it relaxes me tremendously.

Dessert will be fresh blueberries and strawberries topped with toasted almonds and rice pudding.

Leftovers:
Rotini in a tomato, beef and cheese sauce baked a few days ago.
Herb Garlic bread

Not a leftover:
Salad - bell pepper, celery, tomato, lettuce, cheese - dressing TBD.

Constant Comment Tea and cookies (lemon?) afterwards.

I have some lemon crisp cookies, too, so I may add them to the dessert. Bought them on my Trader Joe's foray the other day.

I'm doing my own chicken pot pie, as Ina's recipe is a bit too rich for me. It's too heavy in cream and butter.

Also, I have certain fresh vegetables so I am using them instead of what she's suggesting. Onions is what she suggests; I have fresh leeks from the garden and also chives, too. So that's what I'm using. I had parsnip, so I'm putting a little of that in.

I can do without heavy cream and butter, but the cookies and tea are a habit. These lemon cookies are shortbread with icing.

also some brats, as we thought our son's girlfriend might be joining us, but she did not, too bad, she's a lovely girl. Homemade potato salad with lots of eggs and plenty of mustard and vinegar, a simple cucumber-tomato salad with cilantro, and for dessert some puff pastry made into cases, brushed with egg wash and sprinkled with vanilla sugar, to have with fresh strawberries and pineapple and whipped cream.
