Grilled veggie sandwiches. I toast the roll, pile it high with grilled zucchini or crookneck, tomato, pepper, onion and a big slice of mozzarella cheese. I make chipotle mayonnaise to go on it.
Maybe some chips and pickles on the side.

(2,012 posts)from the little Thai restaurant in Lyons. Chicken, coconut milk, zucchini, carrots, red peppers, lots of white rice. Their curry with pineapple and cashews is even better, vegs are always fresh and not much liquid. I like it mild.

My friend for many years is closing his Chinese/Teppanyaki/Sushi restaurant tonight forever after 25 years. Hotels and upscale businesses will be built in its stead. I'll be heading up there late, if I can stay awake. He called and wanted me to come for his last night. I suspect they will have a party with what ever is left over. So that may be my dinner as well.

They were slammed for their last night. I ended up slicing chicken for the Teppanyaki tables before they closed for good. Too many drinks for me after. Had to catch a ride home. So sad that a one story restaurant that had been in business for 25 years and it's predecessor for another 25 years has to close because the planners think the property is under utilized. They are turning my town into NOVA.

(2,016 posts)Using leftover steak. In fact, all the items except for the guacamole are leftovers (rice, beans, pico de gallo, etc). This'll clean out the fridge and clear up some containers.
Strawberries for dessert.
