What's for Dinner, Tues., Sept. 3, 2019

I'm hoping I can convince the RG to fix the salmon tonight. The only reason he might not want to is that we recently had salmon, in fact, last week. It was so good and that's why I want more. I want it fixed exactly the same way he did it last week. That'll probably never happen. He always has to do something new (I'm not complaining!).

I have Brussels sprouts that I've washed and will toss with olive oil and garlic. Add some yellow peppers and grill it all on my grill mat.

Plus a tossed salad with baby arugula and baby spinach. Instead of vegetables, I think I'll add blueberries, toasted pecans, and goat cheese.

w/ potatoes and carrots. I also took some chopped kale and sautéed it in olive oil w/ sliced mushrooms and garlic (added just a touch of lemon zest just before serving). Oatmeal cookie for dessert.

For Dad and Sis: baked haddock, rice pilaf, steamed vegetables (cauliflower, broccoli and yellow squash) and coleslaw.

The base was a mix of soft feta and cream-cheese with an egg a bit of cayenne. Some people just pile the tomatoes in. I prefer order. Spread pesto on top before baking. The New Yrk Times galette pastry recipe is a slam dunk, sweet or savory. Not my picture, but a reasonable facsimile.

to have for the week, mixed greens and light cheese for me and dairy free chees for my daughter...we added greek yogurt and salsa. Hubs wanted a sandwich so I made him one. Boring but tasty. We also had fruit and cookies for dessert.

It sounds so good...I am going to make the salad today...and buy a grill mat. This is a great idea.
