Related: About this forumI got two pot roasts from Costco...
one I am getting ready to cook, but the other will be extra...so my question is...
Should I freeze it raw or cook it first and then freeze it after?

(58,785 posts)Which would strictly be the mood of the moment. I like to cook several meals at once, so I might just make both roasts together (if they're not too large for my big pot) and freeze meal-size packets of meat and juices or gravy, tucked together in a lidded plastic container.

(11,676 posts)Cook it with lots of whole black pepper corns, and salt, until near done. After a little cooling, strain off pepper corns and save juice. Slice beef thin and add back *juice, add lots of sliced onions, garlic, balsamic vinegar, a little dash a Worcestershire and good amount of Italian spices--cook another hour. Chill and put in serving-sized containers and freeze. When you feel like a a hot Italian Beef sandwich slice a loaf of French bread, or similar loaf, open and cover with mozzarella cheese and micro wave until bubbly. Place a thawed helping of your prepared Italian beef on the melted cheese, cover, and enjoy.
*I will add quality beef base for extra flavor.

(15,073 posts)Back when I had a family to feed, pot roast always had three lives:
Pot roast for dinner with potatoes on the side.
Leftover larger chunks of meat cooked with peppers, onions, and various Italian seasonings to make sandwiches. Topped with melted mozzarella, of course.
Little bits plus any juices or gravy went into vegetable soup.
