Substitute masa, corn flour, for the wheat flour in your recipe.
I use one cup of coarse ground corn meal, one of masa, and one of buttermilk.
Pinch of salt.
Purty damn good.

(13,822 posts)I'm going to try to make butter in my food processor.. The liquid is buttermilk and I just hate putting down the drain. I had no use for it...... NOW I DO!!
Question, do you just use a regular cornbread recipe and add the cornmeal an masa instead of flour?
Never made cornbread before..

(2,672 posts)I can remember real butter milk like you have; thin with little specks of butter in it. The kind you buy at the store is thick. That said, for me it is a must have item in my fridge.
I use it for cornbread, cakes, biscuits and pancakes, gives a nice soft crumb to your baked good.
I always use buttermilk in my cornbread and also in cakes.
