What's for Dinner, Fri., Apr. 3, 2020

Potato, Cheese & Chili soup. The peppers are green bell and green chiles. For the rest of it, think potato-leek soup. On top will be chopped scallions and grated jack cheese.

Chicken burgers with trimmings: cilantro mayonnaise sauce, lettuce, tomato, thinly sliced red onion.

A small chopped vegetable salad topped with toasted flax seed.

Sliced apple with French cheese for dessert. A different kind of tea tonight--chai.

air-fried broccoli, home made soup. Natura organic sulfite-free Chardonnay.

Grilled pork chops with grilled onions, French fried sweet potato, and whole kernel corn. I will say this, I am getting sick of my own cooking! I need a greasy burger, Chinese buffet, or a taco. I have been cooking and managing the kitchen since I retired two years ago. I buy the groceries and I won't even let my wife wash a dish. I have been able to handle it because we usually eat out a couple of times on the weekends.

When I stocked up on food, I did not get enough variety. It is a mistake I won't make again.

It's been cold and damp all day and our internet connection was interrupted 3/4 of the way through my wife's online class.

We needed comfort food!

Salad with mixed greens, tomatoes, red onion, scallions, pickling cucumbers, sliced garlic, hard boiled eggs, toasted sesame seeds, bleu cheese, and figs.

Fresh made chocolate chip cookies for dessert.

I like to buy them for salads because you can use a whole one up in one salad. Cucumbers, like asparagus, goes fast. The bleu cheese and figs in your list of ingredients made me drool!

We’re making a thai green curry with roasted sweet potato, broccoli, and carrots. Sliced chicken sausage over brown rice

I’m looking forward to it 😋

Al's daughter has a home business (in England) selling spices and sauces. She sent us some curry pastes. Al didn't want to try anything spicy, so we used the "mild." It was VERY mild.

Anyway, I browned up some chicken tenders w/ carrot, onions and a little garlic, then simmered all that with the paste mixed w/ some coconut milk and at the end I added some frozen broccoli and cauliflower. Served it over rice.

It was tasty, but I wished I had some sambal to add to my plate.

We still had some chocolate cake left, so that was dessert.
