What's for Dinner, Mon., Sept. 7, 2020

Chive butter on naan and salad with cherry tomatoes, celery, zucchini, green pepper, and beets. The salad has pesto on it. Everything is homegrown. Even the basil used to make the pesto.



I love this time of year!

Later I may have some pasta with tomato sauce and meatballs, but for sure I am going to the store for an ice cream goody.

2 different trucks drive through my neighborhood most evenings. I have resisted their musical calls so far. 🚐🎵🎶🚐.

3rd meal in a row since I made the pot.of pintos yesterday, the rest will be frozen for future usage.


I layered the beans, rice, corn, minced jalapenos between corn tortillas in a casserole. After baking I'll top with avocado,feta crumbles and some sliced cherry tomatoes.

Cold peach decafe sun tea.

Homemade corned beef... a little local grocery makes the most wonderful corned beef using rib eye meat. Mashed potatoes with garlic and Parmesan. Napa cabbage salad. It’s cold today! It’s not going to break 50 degrees.

Your dinners always sound tasty.

We are having marinated portabella mushroom caps stuffed with sun-dried tomatoes, fresh basil, and feta cheese cooked on the grill and topped with a creamy sauce of mayo, fresh lemon juice, and basil. Served with roasted zucchini.

Dessert will be Keto-friendly, frozen, coconut-lime paletas made in popsicle molds.

The weather is so lovely, with very low humidity, so we will eat outside tonight.

on whole wheat buns with homegrown tomatoes, homemade potato salad with homegrown potatoes, green salad and for desert...

HOMEMADE LOTUS CREAM ICE CREAM (lemon ice cream with almond extract and toasted almonds.)

It is simply the most refreshing delicious ice cream for a hot summer day and since we are supposed to hit 110 today this qualifies.

(Thank goodness the cons have assured us that climate change is a hoax. We've only had to evacuate 4 out of the last 5 years due to fire danger...)

steaks--they're a cheap cut, but they're sliced think so a quick sear should do it.

grilled zucchini and yellow squash, marinated in olive oil and garlic

homemade potato salad

sliced tomatoes

dessert is homemade apple crumble w/ vanilla ice cream
