Recipe doubecheck: One cup of scallions?

I made this Bean and Corn Enchilada recipe and it called for one cup of scallions. I added only a half cup and it was still very oniony. And we like onions, but they seemed to overpower the rest of the filling (it was still good).

Do you think this was a mistake? There aren't any comments to see what others thought.

That would be overwhelming! Hubby made an Asian stir fry yesterday and added one chopped scallion between both servings and it was more than enough.

6. A similar tale

Many years ago, I was having a small dinner party and decided to make pasta al pesto, a dish I'd eaten in restaurants but had never made on my own. I gathered the ingredients and read the recipe which called for 6 cloves of garlic. In my naive youth, I thought that a head of garlic was a clove so I chopped up 2 or 3 of the heads before I realized there would be more garlic than pasta!

Thankfully, I realized my error before going on! By the way, the dish turned out just fine.

I think your recipe was calling for one scallion. A whole cup would be very powerful.

7. with 4 cups of beans and serving 6 to 8, a cup of onions doesn't sound too bad to me.

save a TON of work and just layer everything instead of rolling individual enchiladas. also just buy enchilada sauce. yes I am lazy

8. 1 cup looks about correct

if you watch the video, it looks like about 4 green onions, chopped.

No way it means only 1 onion. That'd be a garnish.

9. Recipes are only suggestions, IMO

unless it's baking. Baking chemistry is often unforgiving.

A full cup sounds like a lot. I might put a quarter cup in and have others on the table in a bowl, to be used as topping, along with the shredded lettuce, avocado, sprouts, cheese, or whatever else you've got on hand, even soap weed, er, cilantro.
