Need a suggestion for leftover steak
We had strip steaks for dinner tonight—grass-fed beef cooked sous vide at 135 for four hours and seared. It was tough as shoe leather and I have quite a bit left over. What can I do with it to make it more edible? I was thinking maybe stew of some kind.

2. what about sliced very thinly and made into a stir fry?
Adding it at the last stage just to warm it up with the rest of the dish, and not make it any tougher.

Crock pot cooking will make it tender.

I don’t think slicing it thinly will help it out because it’s really tough. Long cooking is the way to go, I think.

You want to not have long fibers, that's where the toughness comes from. I usually thinly slice it against the grain and then toss them in a cast iron skillet with some butter, salt and pepper.

7. grind it and use it as a base to make meat sauce.
onions, meat, can of diced tomato , beef broth, red wine, spices. You can make a nice thick meat sauce to put on pasta.

I had some tough steaks leftover from Xmas (not the ribeyes, of course heh) cut into chunks and simmered with lots of chopped sauteed onion in some beef broth for an hour or two then added a couple carrots, finally some barley and a ton of black pepper. made great winter soup!

15. I did that too with leftover prime rib
Sautée some chopped onions and celery, add a quart of beef stock and the meat (chopped or cut into cubes.) Simmer about .5 hour or til meat is tender. Bring to a boil, add egg noodles, cook til noodles are done. Yum.

How rare is it? If it's reddish inside, chop it up finely and make a sort of steak tartare (or if the thought of rareish meat doesn't appeal, make it into meatballs. I've found, though, that already cooked meat doesn't hold together as well).
Or make a meat sauce with tomatoes. Or a chili. |
