Low Calorie Key Lime Pie Experiment - successful!

The other day I asked about substitutions for sweetened condensed milk for making a key lime pie: https://www.democraticunderground.com/115776876

My experiment worked pretty good! Here is the recipe I developed:

1 can (12 ounces) evaporated milk
3/4 cup Splenda sugar blend for baking

Heat evaporated milk and Splend blend until Splenda is dissolved. Cool to room temperature.

32 Honey Maid graham crackers, crushed (1 "loaf" in the box I bought or at 4 crackers per sheet, 8 sheets)
1/2 cup melted butter

Preheat oven to 350 F.
Mix graham crackers and butter. Press into the bottom and sides of a 9" pie pan. Bake in preheated oven for 8 minutes. Cool.

4 egg yolks + 1 full egg
1/2 cup key lime juice

Mix milk/Splenda with eggs, beat until fully combined. Add key lime juice and stir until slightly thickened. Pour into pie shell. Bake at 350 F until mostly set - 30-45 minutes.

Cool completely before serving with whipped cream - I used Fat Free Redi-Wip which is only 5 calories a serving.

Usually a key lime pie is baked for only 15 minutes, only enough to heat the eggs to be safe. This pie stayed sloshy for a long time and I may have cooked it a little too long, but the flavor was still good and it was not at all rubbery.

The major reason that there are 4 yolks plus a full egg is that while separating eggs one yolk broke so I added to the yolks I had already set aside.

I used the egg whites to make cookies, peppermint meringues and chocolate chip meringues. Recipe are here:

Those turned out great - and low calorie, too, since I also used the Splenda Blend for the sweetner.

Substitution for sweentened condensed milk in key lime pies

I'm used to making key lime pie from store bought graham cracker crusts, sweetened condensed milk, egg yolks, and key lime juice but I need to cut the sugar.

I did my internet research and found ways to make sweetened condensed milk from scratch and from non-dairy alternatives. I also found some sources that made alternatives with Stevia or other non-sugar things.

But I want to lower the calorie level and use up what I have in the pantry. I have Splenda (original) and will be buying Splenda Sugar Blend for Baking for other stuff. I also have one can of sweetened condensed milk and one can of evaporated milk.

Evaporated vs. Condensed Milk
Because condensed milk contains sugar, it can not be substituted directly for evaporated milk. However, the other way around, you can substitute evaporated milk for sweetened condensed milk and add sugar. For each cup of condensed milk, use 5 fluid ounces of evaporated milk and ¾ of a cup of granulated sugar. Heat the evaporated milk and sugar together over medium heat until the sugar is dissolved completely. If your recipe says to warm the condensed milk, cool it to the desired temperature, otherwise cool to room temperature before proceeding.

I'm thinking I can use this as a guide and use Splenda Blend instead of the sugar. Or could I get away with just mixing the sweetened condensed and evaporated milks and cut the sugar in half?I do like my citrus pies tangy but with key lime, I think this might be too tangy.

Or since I need to make two pies (I'm also making meringue cookies and key lime pie is the best way I know to use up the egg yolks) I could experiment with the evaporated milk and Splenda for one, make the other the regular way and give away the higher calorie pie. Dithering here.

Just ordered a new camera and lens - and I am excited!

Nikon D750 body with a Nikkor 28-300 zoom lens. Both are on sale and I got some nice bundles with them from Adorama. I also looked at B&H but we liked the camera bundle from Adorama better.

Actually I ordered two bodies - we have a stash of lenses dating from our N70 and D70 cameras. While they may not as good with the D750 as one designed for the FX format, they will still work. The sales guy was confused why two camera bodies - my husband would take my camera if I only got one.

Our first trip together I had a brand new Konica 35mm SLR and he had the 35mm camera he inherited from his Dad. At the Painted Forest he dropped and broke his camera. Between there and San Francisco I seldom got to use my camera, so I found a discount camera place in the city and bought another Konica just like mine so we could swap lenses. That was in 1978 and we finally replaced those Konicas in 1999 with the Nikon N70. And I even sold the non-working Konicas with the lenses for a decent price on eBay!

I have to get good with the Nikon before we leave for Britain in July so I hope to post some photos over the next few months!
