I have been a restaurant server, bartender, and manager for fifteen years. None of these jobs is, or has ever been, essential.
Now, after months of an industry shutdown because dine-in full service restaurants were deemed too risky during a pandemic, were told that its okay to start up again. This is madness. Now. When cases in Alameda County, the state of California, and the entire country, not to mention the world, are rising.
Ive gone from feeling nauseated to incredulous to disgusted to defeated and back through the cycle again every time I think about this. Because the truth of the matter is, there is no way to do this safely. None. And we are going to be forced into it anyway.
Masks are impractical when everyone is eating and drinking. And as we all know by now, wearing a mask is to protect those around you, not yourself. So if every guest is maskless, it doesnt matter what I doI wont be protected.
Six feet of distance from guests is impossible if Im dropping off drinks and dishes. I suppose taking orders could be done at a distance, if you dont mind everyone constantly yelling. But in reality, theres no way I will be able to stay six feet from every guest at all times.
The amount of extra time and work that will now be involved in serving guests is significant. Nothing can be reusedmenus, salt & pepper shakers, tablecloths, silverware caddies, condiment bottles, check presentersthe list is endless. The heightened level of sanitization of every surface touched by any guest is another layer to consider. And what about bathrooms? In both restaurants I most recently worked at, each had two single occupancy bathrooms. How is it safe for not only employees, but every single guest who dines in, to use these very limited spaces with extremely limited airflow? Its not practical or financially feasible to have an employee dedicated to sanitizing bathrooms after every use. There is no realistic way for them to be safe for anyone to use, but most especially staff, who will more than likely have to use them multiple times in a shift.
Have you ever been in a restaurant kitchen? Or behind a bar? Ninety-nine percent of the time they are extremely cramped spaces. Distancing is impossible. And you cant run either with just one person. It takes a lot of people to run a restaurant with table service. Reservationist, host, server, busser, runner, bartender, barback, expo, line cook, dishwasher, manager. Youre asking every single one of those people to come into contact with each other and countless guests, exponentially increasing the chance that one person with the virus will spread it through multiple vectors, each one of them risking taking this virus home to their households, infecting their families.
Sure, guests can relax at their six-feet-apart tables outside with plenty of fresh air and feel comfortable and relatively confident that their risk is low. But for us, for the staff thats stuck together in cramped spaces, coming into contact with dozens or even hundreds of people in a single shift over the course of god knows how many hours, maskless people sipping and chewing and laughing and talking, were the ones who are going to have to risk our health and our lives. The level of stress this puts on us as restaurant workers whose jobs were already pretty damn stressful, well, it makes zero sense to me. And for tipped employees who rely on volume, working in a restaurant operating at half or lower capacity makes zero financial sense as well.
So why should we be expected to put our lives, our health, our futures, our safety at risk, to make significantly less money than we used to make, while enduring more stress, just so that people can delude themselves into pretending that the world is going back to normal with a plate of french fries and a margarita? If Im making half of what I made before, I will have to scramble more shifts together to make ends meet, thus increasing my risk of exposure to the virus. Does this sound like a good deal to anyone?
I am not expendable. My colleagues are not expendable. Dining in a restaurant is not an essential experience. It is a luxury. And its a luxury that no one should be indulging in right now when the harm it will cause to workers is so great. Show me data that says were safer now than we were before the shutdown. You cant, because there isnt any. The risk to our lives is the same. The only thing thats changed is that now people dont care.

I hope you watched the news video we linked to in Wednesdays email. Based on the heartfelt thanks I received from so many of you it holds a great deal of hope for our times. Our Minneapolis store, like others in the Uptown area, suffered broken windows in the wake of the murder of George Floyd. This led to stores being boarded up with a whole lot of plywood which was bleak. Then something kind of wonderful happened. As some pretty outstanding graffiti started showing up the Uptown Association quickly encouraged a bunch more by handing out $100 for supplies to local artists. The results have been stunning. The artist who did our window boards, in addition to an emotional When Doves Cry-inspired piece, incorporated our Embrace Hope image in his work as well. I found seeing the art that Jeri and our kids created at our kitchen table (where Im writing this) taking on a new life as part of a community coming together to heal from the pain of police racial violence overwhelming. From your comments after our last email the tears from seeing this in the video are not only in my eyes. For Cooks, this really is what it is all about.

I am so gladdened by so many business leaders speaking out against racial injustice even if some seem a little late getting on the field. If NASCAR wants to be shocked, SHOCKED! to find theyve been promoting a wee spot of Confederacy I will gladly be shocked right with them. And if the NFL wants to do a victory dance for being the one sport brave enough to give Colin Kaepernick the platform to start all this I wont throw a flag for excessive celebration. America is all about redemption. Its not who you were, its who you are. Lets help and encourage every business to become a force for good.
Still, in seeing the new arrivals standing in support of those facing racism, and some even brave enough to risk losing sales to the less than one percent of Americans who openly identify as white supremacists, I have to say this alone will not be enough to bring the change we need. Donations to those facing racism are great and welcome, but as long as only those on the receiving end of racism pay its costs it will be with us forever. Its only when those actively creating racism feel the pressure of being called out for their cruelty that there can be any honest hope for change. It is here where I think Penzeys can make a difference.
At the heart of cooking is the truth that when we care about others the future becomes a better place. There is little more uncaring and more damaging to all our futures than racism. Many who once voted for our president no longer support him and hooray for that. But the fact we have to live with is that the majority of the sixty-three million Americans who voted for an openly textbook racist candidate for president want to pretend that there is nothing racist in their actions. As long as we let them pretend, racism isnt going anywhere.

We wont be saying who to vote for or against because that would be campaigning and we dont do that. Powerful artwork....
I came across this artist named Adrian Brandon last night. However old the person was when they died, is the amount of time he spends coloring their picture. Tamar Rice was only 12 when he was murdered, so the artist only spent 12 minutes coloring his picture.
I want the viewer to see how much empty space is left in these lives, stories that will never be told, space that can never be filled.
