Laurent Duvernay-Tardif 2020 Musial Award Honoree

Watched the Musial Awards yesterday and had forgotten that Duvernay-Tardif opted out. Also, didn’t realize it was to go to work in a Covid hotspot serving others.

I am a huge KC Chiefs fan and this warms my heart and it grew 3x in size! ❤️❤️❤️

Shifting from the front line of offense for the Kansas City Chiefs to the front line of defense against COVID-19 proved easy for Laurent, despite his 321-pound frame. Laurent holds a medical degree and just weeks after winning the Super Bowl answered the call for medical students and degree holders to relieve front-line healthcare workers in his native Montreal. He was assigned to a long-term care facility, many of which were hit especially hard by the virus in Canada. Laurent also served on the NFL Players Association task force for a safe return to play, then became the first player to opt out of the season. “I cannot allow myself to potentially transmit the virus in our communities simply to play the sport that I love,” he said. “If I am to take risks, I will do it caring for patients.” Laurent then spent the season taking online classes at Harvard’s T.H. Chan School of Public Health.

Easy Christmas appetizer and dessert

Two easy cream cheese recipes.

Raspberry Cream Cheese Candy Cane

Pistachio Cranberry Cream Cheese Log

1 pkg cream cheese
Dried cranberries
Pistachio nuts

Chop the nuts and cranberries, soften the cream cheese.
In a bowl mix the cheese with a handful of the berries and nuts plus a pinch of salt.
Next, drop this mixture by spoonful into some plastic wrap. Firm your log and refrigerate for about half hour - or longer.

When ready to serve place the remaining nuts and berries on a dinner plate and unwrap the cream cheese. Roll the log in the nut mixture to completely coat the outside. Place log on serving dish and arrange crackers around.

There is a machine shop hiring in Ballard. I just had a phone interview and got the invite to the shop next week!!

Update: I currently have a part time job that doesn't pay the bills. Without me telling my current boss about the possible new position...yesterday, she offered me a management position that comes with a $2hr raise and 40 hrs a week Wtf? 🙂

Cauliflower Steaks

I made these a couple days ago. The key is really using enough spice!

Started with rubbing with canola oil. Then copious amounts of salt, pepper, cumin, curry and some crushed red pepper flakes.
Baked for ten minutes in a hot oven near the bottom then moved to broiler function to brown nicely on top. At or around 20 minutes tops to cook to perfection!

The "icing on the cake" tho, was chopped, toasted almonds. Oh. My. Goodness!
Addicting!

Still have half a very large head of cauliflower and need some suggestions...

Wrote to Gov Inslee for the 5th time!

Since April.

I am in bar/restaurant industry.

What is being done to this industry and it's employees is catastrophic.

Meanwhile, I can go to Goodwill, Home Depot, Ross and any other retailer INDOORS! I don't go. But I can.

Meanwhile, there are millions unaffected by job loss and millions more who sat home and earned $600 more per week (and more then their regular pay on top of stimulus) and bragged about it.

Facing eviction, starvation (food lines sooooo long), and hundreds of applicants for jobs that are available.

Shut it all down! This picking and choosing is meaningless in the face of the virus. Letting some thrive while so many others go down in flames is breaking my mind.

Chicken Tortilla Soup?

It's my favorite but I've never made it.
Going to make it this weekend.

Any fabulous recipes, tips, or additions to share?? Will start with an organic rotisserie chicken.
