Chasing Red Cotton Flower Noodle Soup Across America

My mission to find Northern Thai delicacy kanom jeen nam ngiao in the United States.

I thought I knew everything there was to know about Thai food. I was born in Bangkok and grew up in the kitchen with my mom and grandma, who prepared trays of papaya salad and curries that simmered for hours. I never turned down a dish because it had too much fermented crab or was too fiery. To me, Thai flavors were perfect and I ate them all. But a country like Thailand is so vast, its cuisine so regional. A dish in the north can taste completely different in the south, and there’s so much to discover in the hyperlocal cuisines of each neighborhood and village.

Take kanom jeen nam ngiao, or red cotton flower soup. The first time I tried this dish was the summer of 2018. I was 24 years old and spending a couple of weeks in Thailand with my mom following a difficult time in my life. We were traveling up and down the lengths of Thailand—from Bangkok to Khon Kaen to Chiang Rai, a place I’d always heard of but knew very little about. Chiang Rai is the northernmost province of Thailand, known for its majestic mountains, cooler climate, and a daring cave rescue that took place a mere two weeks after I had visited. It’s also known for kanom jeen nam ngiao, or red cotton flower noodle soup. Kanom jeen refers to the thin strands of fermented rice noodles that make up the base of the dish, while nam ngiao translates to flower water, which references the vibrant cotton flower-laced curry soup that is ladled over the noodles.




This was a noodle soup I had never tasted before. Even saying the name of the dish felt foreign on my tongue, despite speaking Thai all my life. But my mom, who occasionally enjoyed this dish during her childhood in Bangkok, insisted. We found a noodle stand on the side of the road, complete with plastic stools and a grinning chef. The first sip was transformative—funky with fermented soy bean paste and the rich and sweet flavor of stewed pork bone broth. The shrimp paste was pungent, but mellowed out by bright tomatoes. Pickled mustard greens made for a complementary acidic bite, and roasted chili powder added ample heat. A crown of bean sprouts and fresh cilantro ensured that nothing was too heavy. It was perplexing. The flavors were familiar, save for the dried cotton flower core that gives nam ngiao its name. But having this combination atop rice noodles was completely new.

I returned from that trip rejuvenated and dreaming of the dish, but also baffled as to why I had never heard of it. It became a fixation. My grandmother was from Uttaradit, a gateway province to Northern Thailand. Was it too far south for her to have learned how to prepare it? Or was it too difficult, the flavors too complex, that she stuck with sticky rice and beef jerky for us kids? I came to the conclusion that Los Angeles, the place I grew up, a place bursting with Thai restaurants, just didn’t have this style of Thai cooking—at least none that were known to me. That was until recently.

Israeli Army Claims Soldier Mistakenly Killed Al Jazeera Reporter Shireen Abu Akleh

A journalist covering raids on the West Bank in May was likely killed by an Israeli soldier, the Israeli army said Monday after concluding its investigation.

Initially, the Israeli military claimed Al Jazeera reporter Shireen Abu Akleh may have been killed during crossfire of militant groups.

However Al Jazeera’s claim that she was shot by Israeli forces while clearly wearing “PRESS” gear was backed up by several independent investigations, including one by the UN and a reconstruction of events by the Associated Press.

The Israeli army belatedly launched an investigation which concluded “with very high likelihood” that a soldier struck Akleh—however the soldier did so mistakenly while shooting at Palestinian gunmen.

What Makes Fish Heads so Damn Delicious?

From Iberian prawns to South Asian curries, they are the crowning glory of the seafood world.

We’ve all seen travel shows where the host (maybe reluctantly at first) sucks the juice out of a fish head and, eyes widening, is always pleasantly surprised with the result. Though it can be a discarded part of seafood preparation, this crowning glory is rightly considered a delicacy around the world. Be it the herb-boiled crawfish from New Orleans, the tender prawns of Portugal, the rich South Asian curries like Keralan meen thala or Malaysian and Singaporean curries, fish heads are full of flavor and should always make it to the plate.

For Asheville-based Katie Button, co-founder of tapas bar Cúrate, she honed her craft in the kitchens of leading Spanish chefs such as José Ándres and Ferran Adrià and that’s where she fell in love with Spanish culture and cuisine. This included making use of the whole fish. “A prerequisite for flavor in rice dishes like arroz caldoso or a paella is finding use of the heads,” Button says. “Searing them to get that wonderful brown color then simmering them with water to pull out all the flavor.”



In chef Josh Nilard’s cookbook, The Whole Fish, he teaches you not only how to cut, clean, and choose a fish—but also sings the praises of fish heads. In the book, he says that one of the reasons why they’re a culinary delight is that juices in the head of seafood cook along with the meat, leading to a perfectly reduced sauce. Button explains the result: “Fish head is full of an oceanic, briny umami flavor and incredibly sweet all at the same time.”

The same can be said about Bengali, Maharashtrian, and Goan preparations where fish heads are cooked in gravy. Chef Gresham Fernandes, culinary director at Mumbai-based Impresario Hospitality, has childhood memories replete with eating fish head curry and rice. “While growing up, whenever my grandfather brought home a big fish, we would break it down into big chunks,” he says. “My mom would sit for hours cleaning out each part carefully, it would be put into a bubbling East Indian-style gravy.”

Tasting Notes

A combination of second press juice from all of the white wine holdings covering the entire four hectares. Because this includes everything from the five-year old vines of Kosmopolit to the old-vine Gruner planted in 1960, it's considerably more serious than most wine bottled in the liter format. This is a field blend of local grapes planted in the area of the capital city of Vienna. The name is a play on words as Wien means Vienna and Wein means wine.

Graphic designer turned winemaker Jutta Ambrositsch manages this estate of four hectares with her husband. Their 'Wien' liter is a winner. It's a lovely white made from a blend of grapes from all of their vineyards. It's also an homage to Vienna's unique wine culture. This capital has the highest wine production within city limits per capita of any urban center in the world. The vineyards in surrounding hills look over the palaces and high rises in the central city. This aromatic wine has some body on it with yellow plums, melon, and flowers on the palate. Its off-dry profile is balanced by vibrant acidity. It's more complex than most wines sold by the liter. Pair it with bold flavors. Think kimchi bokumbap or currywurst on rye.

Vienna, Austria The Appellation of Vienna dates back to pre-roman times and has 1,650 acres under vine, all within the current city limits. These vineyards are home to the now famous Viennese Gemischter Satz (Viennese Field Blends, meaning “mixed set”) which, in an effort to preserve the city's cultural heritage, have therefore been recognized by Slow Food as an Ark of Taste and a Presidia Project. A former graphic designer, Jutta Kalchbrenner discovered viticulture and made a like change in the mid-2000s. She took on vineyards on the Grinzinger, a hillside tourist destination near Nussberger Prussia and Sommeregg. Jutta farms the mixed fields of vines and old vine Riesling under her maiden name, Ambrositsch. She works extremely naturally, using Biodynamic methods to achieve a fresh, balance result.

How the Big Lie Ended Up in a Sixth-Grade Classroom in Florida

A study sheet used the media’s coverage of the Big Lie as an example of bias—in a state whose governor has avoided taking a clear position on whether the 2020 election was stolen.

Today’s lesson is how the Big Lie made it onto a world history study sheet handed out by a substitute teacher in the sixth grade at the R. Dan Nolan Middle School in Bradenton, Florida, on Wednesday. It was a take-home sheet headed “How Does a Historian Work?” and it was meant to prepare students for a test on Thursday. One mother proceeded to quiz her child on its list of vocabulary words. The first six were evidence, source, primary source, secondary source, reliable source, and point of view.

“Then came No. 7,” the mother, who asked not to be named, later told The Daily Beast. The seventh word was bias and the mother was shocked by what accompanied it.

The media is often biased and will add words that persuade you to think one way or another. Read these two statements made by reporters after the 2020 election.

The first sentence is just giving you information, while the second leads you to believe he is wrong before you have all the facts.


Never mind that the whole world has all the facts and what the second statement leads you to believe is the truth. And, in failing to acknowledge that former President Donald Trump’s claims have been proved false, the first statement might lead you to imagine that his claims might have merit. “It’s actually the most biased example of bias I’ve seen,” the mother later said. “It seems pretty out of place for a sixth-grade class.”

California's New Internet Law Is a Fucking Disaster

In the name of protecting children, legislators have introduced a trove of requirements that are anti-privacy and almost impossible to comply with.

For decades now, it has been a challenge for parents and others to make sure that children can experience the benefits of the internet without being exposed to its more harmful aspects. However, that concern for children can often be taken to such extreme levels that it does more harm than good.

In the 1990s, an exaggerated news story based on a quickly debunked report about online porn resulted in Democratic Sen. James Exon pushing through the Communications Decency Act. Exon, somewhat famously, printed out numerous pornographic images he found online, and put them into his “little blue book” to show other senators to urge them to vote for his law. Exon’s law was later struck down by the Supreme Court as unconstitutional, saying it would place an “unacceptably heavy burden on protected speech” that “threaten[ed] to torch a large segment of the Internet community.”

Moral crusading about the risks of the internet to kids never goes out of fashion, however. The latest version of this is driven by a British baroness, Beeban Kidron, a Hollywood film director who launched a nonprofit organization to push for laws to, ostensibly, protect children online. When people have pointed out the challenges of regulating the internet, she has pointed to China as a positive example.

Kidron’s group, the 5Rights Foundation, takes credit for the U.K.’s Age Appropriate Design Code (AADC)—which is not actually a law, but rather guidance for regulators on how to interpret the U.K.’s Data Protection Act. While 5Rights has submitted hundreds of complaints to U.K. regulators about websites under the AADC, the regulators have not taken action on any of them. That has not stopped 5Rights from taking credit for dozens of changes to various internet services.

Physical integrity of Zaporizhzhia plant 'violated', says UN nuclear chief

The “physical integrity” of the Zaporizhzhia nuclear power station in south-eastern Ukraine has been “violated”, the head of the International Atomic Energy Agency (IAEA) has said, as Ukraine’s authorities accused Russia of misleading the inspection mission. Rafael Grossi led a team of inspectors to the Russian-controlled plant that has been frequently shelled in recent weeks, raising fears of a nuclear incident.

“It is obvious that the plant and physical integrity of the plant has been violated several times,” Grossi told reporters after he returned with part of his team to the Ukrainian-controlled area on Thursday. Grossi said although he would continue to worry about the plant, the situation was “more predictable” now.

Grossi told reporters he was able to tour the “whole” site, including the emergency and control systems. He also said he managed to talk to local residents and the plant’s Ukrainian staff, who stayed at the plant when the war began. He said the workers are in a difficult situation but are “calm and moving [onwards]”.

Ukraine’s state nuclear agency, Energoatom, said on Telegram the IAEA was not shown certain areas of the site. Energoatom said the IAEA was presented with a staged “show” and the Russian authorities tried to prevent the mission from understanding the “facts of the ground”. Ukraine’s president, Volodymyr Zelenskiy, accused Russia of intimidating people in the nearby town of Enerhodar to lie to the IAEA representatives about events at the plant and “sign things”.

President Joe Biden delivered an important speech in Philadelphia on Thursday night about the threat that Donald Trump and his followers pose to the future of American democracy. It was fiery and blunt by Biden standards. And there’s probably no better proof that Biden’s speech was desperately needed than the reaction it received online. Trump’s army of whiners and assholes absolutely lost their shit.

Trump supporters were simply aghast that a president of the United States would deliver such a divisive speech. Can you even imagine if Trump had ever said anything so polarizing? Biden said he was going to bring the country together, they whined, not speak frankly about the neo-fascist ideology of Trumpism. How dare Biden be so callous and mean? What did Biden actually say? He spoke honestly about what will happen if Trump and his acolytes are allowed to retake power.



“Donald Trump and the MAGA Republicans represent an extremism that threatens the very foundations of our republic,” Biden said, insisting that he wasn’t talking about “mainstream Republicans.” “MAGA forces are determined to take this country backwards. Backwards to an America where there is no right to choose, no right to privacy. No right to contraception, no right to marry who you love,” Biden said, hinting at efforts to overturn marriage equality at the Supreme Court.

“They promote authoritarian leaders. They fanned the flames of political violence,” Biden said in a reference to the January 6, 2021 insurrection at the U.S. Capitol that sought to overturn the 2020 election. It was all objectively true. But it was way too much for many Trump supporters to hear.
