Name a classic French dish and I’ve cooked it and many of them often.

A good set of stainless steel with copper core is worth the hefty investment. I cook on All-Clad. There are other good ones but all are expensive.

Professional chefs don’t necessarily need them because they are expert at temperature control. You can buy good cookware for a reasonable price at a good restaurant supply store.

I just spent 5 years splurging on what I wanted.

Your meal sounds good. Kind of a poor day jambalaya. I’ve made it often.

Ironically despite my fancy cookware, being from Louisiana I cook with cast iron as much as anything. Several well seasoned iron skillets and a Dutch oven are critical for being able to cook my Louisiana classics.
