Barr chose to defend the office of the presidency which means that DOJ substitutes for Trump in court. Merrick Garland became AG, he did not have to stay on in defense of the office, but he did.

Of course technically Garland isn't defending Trump in court, he is defending the office of the presidency which means that he believes that defaming someone is an official duty of the president. A district judge disagreed with Barr/Garland and claimed it wasn't an official duty, whereupon Trump appealed. If Trump were to win the appeal it would have been a much harder case for Carroll to win seeing as DOJ would be taking the place of Trump in court.
