7. Many years ago I discovered the Ida M apple, related to the...

Ida Red, but had the perfect tast and structure for pies. Pretty close to Granny Smith, but even better.

I've been trying to find it lately, but none of the orchard guys remembers it and searches note the passing of Ida M Apple in 1907 and, of course, Ida M Tarbell. But no fruity Ida M apple. Might have been a patent dispute, but who knows...

Anyway, a good source for Granny Smith is a thing to have if you're going to cook an apple.

Until I find an Ida M tree, any way.
