6. Stuffed Eggplant Balls

It was a little labor-intensive but well worth it. And I usually shy away from fried foods.

You cook a medium halved eggplant in water, let it cool, then press out any liquid. Then you chop it finely and add to a mixture of egg, Romano Cheese, bread crumbs, parsley, salt & pepper. You mix well and then form into balls about the size of a handball, maybe a little smaller. Make a well and insert a cube of smoked mozz. Then you roll the balls in more breadcrumbs.

I had the balls in 2" of oil for about 5 minutes tops and let them drain on paper towels.

You serve them with Marinara Sauce.

And yes, I'd do it again.

BTW, I think I ate half the recipe.
