2. Love zucchini, but it's always so prolific!

If you need another recipe to use zucchini, my hubby and I use it in baba ghanouj. It's not strictly traditional, but it gives it a sweeter flavour, and if you grill it (instead of roasting as we did in the video) it gives the baba ghanouj that lovely smokey flavour.
