Hey There,
I've got a bunch of chicken breasts, and the basic staples of condiment--lots of spices, soy sauce, sesame oil, mojo, etc. That kind of thing.
What are some good, easy recipes w/ chicken breasts? I'm happy to chop them up, cook em in olive oil, etc.
Right now, all I do is soak the breasts in mojo, and bake them for 1/2 hr.
Any other people have any ideas? I'm hoping to stop eating out so much, so simplicity is a big plus

cover them with mayo (really!) Roll them in seasoned breadcrumbs and bake. Vary the seasoning. My favorite is garlic and rosemary. --or-- coat them with prepared brown mustard (really!) and bake. Don't use the yellow stuff, it doesn't work.

Marinate 4 (chicken) breasts in a mixture of 1/4 cup olive oil, 1 tbsp lemon juice, 1/2 teaspoon cayenne pepper and 1 large crushed garlic clove for 1 hour (use more cayenne if you like it spicy).
Wrap in foil and grill over medium heat or you can bake uncovered in a conventional oven at 350 degrees. Good stuff!

cut into strips, and marinate with some soy sauce and sesame oil in the fridge for 20 minutes or so. then cook over very high heat (with a little veggie oil) in a wok or heavy frying pan just until the strips are cooked through. throw in some veggies, cut up, along with about 1/3 cup of water and cover for 2 minutes. pour out remaining water, put chicken back in; add some more soy and sesame oil, heat through and enjoy

1 lb. boneless chicken breasts, cut into 1/2" strips 1/2 cup nonfat sour cream or yougurt 1/2 cup low fat mayo 1/2 medium onion, finely chopped 1 T. curry powder 1 t. ginger root, minced 1 t. paprika 1/2 t. black pepper 2 cups cooked rice (I use jasmine)
combine sour cream (yogurt), mayo, onions, ginger & curry powder. combine paprika & pepper & sprinkle over chicken. Toss until coated.
Add olive oil to frying pan & cook chicken til done--3 or 4 min. When cooked, add sour cream mixture til heated. Serve over hot rice.
This is a very easy, FAST recipe. Very forgiving, too. I usually up the amount of mayo/cream & sometimes add raisins & nuts. Also some fruit on the side.

Chicken breasts, plain yogurt, French Soup mix, and bread crumbs. Slather the breasts with yogurt (oh, yessss... Oh, excuse me... Got off track) and roll them in the soup mix and bread crumbs then cook at some temperature for some amount of time. If this one interests you, send me an email, and I'll look it up for you.
A cheap barbecue sauce that I like to make involves ketchup, your favorite soda (I use A&W Root Beer because it adds bite), garlic powder, and cinnamon. My friends and I made this in high school without the garlic powder and cinnamon - those were my additions, I'm proud to say. :)

A really tasty way to deal with chicken is to buy some really nice plain yoghart, a good tandoori powder (Penzeys Spices sells them if Tandoori Masala isn't available in your local market). Mix a couple of tablespoons, the juice of a lemon and a cup or so of yoghart in a bowl. Let marinate for about two hours. Heat the grill.
Take them out of the liquid and wipe them off a bit and grill these chicken pieces. Since you're using boneless chicken breasts, baste with a little vegetable oil.
Serve with whatever veggies you want - this goes with anything. It goes really well with grilled corn on the cob and a big salad. You can serve some pita bread too if you want.

Pound the chicken flat- Dredge in egg then Progresso Italian Bread Crumbs. Pan fry in a mix of olive-peanut oil until golden brown. Serve with Lemon wedges. It is basic and sooooo good.
Of course you can also melt some mozzerella cheese on top with some tomato sauce for parmagiana instead of the lemon

I was just thinking about this looking at the bunch of French tarragon I have growing outside my kitchen door. If you need to, you can probably grab a bunch of tarragon at your supermarket.
Two Chicken Breasts About a half cup of chopped tarragon leaves Half a bottle of white wine A coupla tablespoons of butter. Flour. Salt, pepper.
Dredge boneless, skinless chicken breasts (or any other part, I kinda like thighs) in flour.
Brown in melted butter. When browned, take them out and add just enough flour to make a decent roux, a creamy sort of paste of butter and flour and just let the flour cook until it barely starts to brown. Add the wine now. Having the wine already open helps because you don't want to burn the roux. Add the tarragon leaves and the chicken breasts, cover and simmer for about twenty minutes. Serve over fresh pasta.
Simple, impresses the chicks, and different.

Pound the chicken breasts flat with the back of a chef's knife until they're 1/2" thick. Cover the meat with lemon slices and green onion bulb slices. Bake at 375 on greased cookie sheet until done.
While the chicken is cooking, mix 3/4 cup of shredded Parmesean cheese with 3/4 cup of REAL mayonnaise and add some chopped green onion tops to it for color.
Remove the chicken breasts from the oven, discard the lemon and onion pieces and coat with a 1/4"-1/2" of the cheese-mayo mixture and place under brolier. The mixture will 'puff up' as it broils. Remove as soon as it's browned on top.

For a walk-away type recipe, put 6-8 chicken breast in your crockpot, throw in a bottle of GardenStyle Ragu sauce, add fresh garlic & whatever spices suit you. Set to cook on low for 6-8 hrs. Serve over rice.
Easy, quick & you have plenty of time to devote to the DU without having to stop & do real cooking! Enjoy!

Archive search is off right now, but when it comes back search the Lounge for a post by me with the word "boneless" in the title.
I'm happy to say there's only one. :) It's quite a thread.
On edit: Bonus points to anyone who knows why they call skin on, rib bones removed and wing bone attached "airline chicken".
