makes the best and now I do too. Ground beef, parsley, fresh garlic, salt, pepper, bread crumbs (those Italian ones, Progresso) egg.
The key to meatballs is not to roll them too much, cuz then they get too rubbery, tough - and to add a little water to the mix. Brown in skillet.
Cook in favorite sauce

I use half beef and half pork (not sausage)
I add chopped onion and a little grated cheese. I don't pan fry though I bake them which makes them less greasy.

I thought it was important to roll them plenty, so they stay together better... Translation: all of mine have been rubbery.

Works for chicken and turkey meatballs, too, but they're trickier to brown.
And I usually use a brown gravy, not the red stuff. Nothing wrong with the red stuff, it's just everywhere. My brown gravy is reduced beef and chicken stock and thickened with instant potatoes and sour cream. Maybe some sliced red and green bell peppers in there, too. And carrots.
And shrooms. I'm big on shrooms, and always have a box of baby bellas on hand for just about everything.
(Ever cook up a box of frozen spinach in chicken stock with some herbs and shrooms in it?)
