In praise of Smoked Goose Breast from Schmiesser's Meats on Milwaukee Avenue in Niles Illinois.
Since 1954 Schmiesser's has been supplying discriminating prime meat lovers the best prime quality meats from the midwest. My favorite thing they make there is smoked Goose Breast . They take the whole breat from the goose, and sew it up with the skin and fat from the goose's chest. The result is a 2 pound cylindrical rolled sausage thing they smoke for a month. Sliced in very thin slices smoked goose breast is a rare, mouth watering treat. At 28 dollars a pound its a bargain. A whole goose costs at least 50 dollars and for me, this is the best way to serve it.
