I've made the best veggie lasagna ever! The secret ingredient is a layer of one pound of crumbled tofu mixed with one batch of Isa's vegan pesto from VWAV. OMG! It is the best lasagna I've ever made. :thumbsup: :thumbsup:
Layer in this order:
..a generous amount of sauce ..lasagna noodles ..tofu/pesto mixture ..lasagna noodles ..veggie layer - a generous amount of your favorite chopped veggies ..lasagna noodles ..lots of sauce ..vegan mozz if you desire
I've made this three times in the past 6 weeks. Because it's so hot & I don't have air, I assemble it one day & bake it early in the morning the next day.
In another cooking adventure, I had an accidental treat -- baked tofu crumbles. One of my tofu blocks literally crumbled apart as I sliced it for baking, so I just scooped it together in a corner of the pan & seasoned it like the tofu slices. I stirred it up occasionally as it baked. Oh my! It would be a fantastic base for a Shepard's pie! I'm already planning my T-day dinner around this! ;)
I just received my first ceramic knife. Whoa! Were my metal blades ever this sharp? My husband doesn't even want to be in the kitchen when it's out, but I love it. I have never sliced onions so finely as with this lovely instrument! But extreme caution is required. It is razor sharp. I barely touched it agasint my finger & got a little slice. Has anyone else used ceramic knives?
And the last thing - I am addicted to Penzey's spices. I have saved a fortune buying quantities instead of those little jars.

Thanks especially for the Penzey's Spices tip. I'd never heard of them, so I looked up their website. Now I want to try a number of items and think I've found a wonderful source for special gifts, as well!

Quick-grilled the veggies first and used rice lasagna noodles which was different but really tasty, not as starchy as the regular lasagna noodles. Also added one sliced boca bratwurst, which I always do with Italian food (such good flavor!) I'll keep this recipe - thanks for posting!

There's a Penzey Spices near my house. I'll check that out . . . I've been having to go far afield to get spices for some experimenting I've been doing with Indian food.
