| L'shanah tovah! A vegan Rosh Hashanah. |

This is my first Rosh Hashanah in my fitful progress towards veganism. Although separated from my husband, our family will be celebrating together.
Traditionally we have brisket and challah, an egg bread. The boys will be eating the traditional dishes. I will have tzimmis; salad of greens, sprouts, walnuts and dried cranberries; and, I hope, vegan challah with almond butter. The dough is proofing right now.
Tzimmes is vegan-friendly. It's a sweet dish to ensure a sweet new year. There are lots of variations, but it's basically sweet root vegetables (sweet potatoes, carrots), dried fruit (prunes, raisins), a little orange juice and cinnamon, maybe an onion or some maple syrup if you like, covered and baked in a 350 oven for an hour.

On edit - can you post your vegan challah recipe, please? There's one on the PPK board that uses bananas that sounds interesting.
