Sauteed Sweet Potatoes with Cranberries and Pecans. You peel and slice (1/4") the sweet potatoes (1 1/2 lb), saute a couple minutes in a little olive oil (1-2 T), sprinkle with salt and pepper,then cover to cook for about 20-25 minutes, until tender. Then add 1/2 c dried cranberries, 1/2 c toasted pecan halves, 2 T dark rum, 1/2 t brown sugar, and 1/4 t ground allspice. Stir and cook a couple more minutes, serve immediately.
I don't think I will ever do the sweet potato glop again. This stuff is WAY better.

looking for a new way to prepare them. Here's something I've been doing: Peel a few sweet potatoes, cut them into 1" cubes, drizzle them with oil (or spray them if you have an oil-o-pump sprayer), sprinkle with a little salt and place them on a large, flat oiled pan in a moderately hot (400) oven for about 30-45 minutes. Turn them with a spatula a couple of times during cooking. Mmmhhh. Good.
