My two favorite cuts to make jerky with are eye of round and brisket...but I discovered a great way to cheat
The mexican markets near my house sell eye of round marinated for carne asada...I just cut those...put them in my dehydrator and they come out great! No prep needed..and I don't have to sit there slicing frozen eye of round to get it thin enough

you can also heat your oven to 100 degrees and leave it in there a few hours on a baking sheet
