| Cooked tonight for the first time in months |
|
Aside from minor little stuff, like to get my son dinner, I really haven't cooked for months, since I've been sick, but I felt up to it tonight, made my Thai Chicken Curry in coconut sauce w/basil, and I have to admit it was nice to be doing it again. I was finding it hard to get the energy, but as time passes I'm getting more energy, so it was nice to get back in.
No response necessary - just yammering. Happy.

I've been seriously ill from one thing or another since 2001. I know how great a day it is when you feel up to cooking! I wish you many, many more.

A little store-front restaurant in west Santa Rosa, Calif. called 'Angkor Wat', 15 years ago.
Oh....! Simple chicken legs in a curry coconut sauce with lots of whole basil. Sheer delight.

When I've gone though times of not cooking for any reason, I've felt very disconnected to reality... not pathologically, but separated - you know? Putting together meals seems to be so soothing, so grounding, so much a part of Life (with a capital T).
I'm glad for you, and I understand your feeling...

Not being a coconut fan myself, I can't imagine combining it with chicken :silly:
