If I were going to go to the trouble to make angel food cake, I think I'd do a full batch and make more than two mini cakes. Angel food stores pretty well.

Well, longer than it takes to scarf it up if there's chocolate sauce in the house. My problem here in the desert is keeping it from drying out.
I've found the solution to cooking for one to be a freezer, not reducing recipes to the point they generally don't work very well. I freeze leftovers for nukable fare on those I don't want to cook nights that are coming more frequently these days. The freezer is also my Costco solution as bulk food can be divided and prepared for freezer storage and stretched out over the whole month.

when I experienced family size changes it took forever to adjust to cooking for fewer folks. The freezer turned out to be an enemy - I put so much away....
Now it's a bit easier, I've adjusted to cooking for 2, but baking! cakes are waaaay to large, pies - enormous! I'd love to have a way to make goodies that we can finish in one or two servings.
