I finally got it put together today. I made a few adjustments to the recipe -- I put two tablespoons of rum into the thickened filling while it was still hot. And I grated some orange zest into it today while putting it together. And I topped it with sliced kiwi, cut into quarters, and mango slices. It was a really pretty pie.
AND....I put it out in the pastry case at the coffee house. About ten minutes later, my family member came into the kitchen and said that a customer wanted to buy four slices to go. Before I left, there was only one piece left.
So, thank you thank you for finding this winner!

I'll substitute the Mango necter for Apricot necter then cook up some fresh (or stew some dried) with some Ammeretto (Just because I love it with Apricots)....Yummers....Thanks for that.

The filling thickened up beautifully. (That's always my great fear -- a filling that doesn't jell.) Whipped cream on top gives it a creamy double whammy.
I love the idea of apricot. I'll be doing that when they are in season.
