Anybody roast their own? I just did a batch- came out great!
1 lb raw cashews water salt soy sauce
I wet the cashews with a little water, then sprinkled them with salt, let that dissolve a bit, then added a tsp or so of soy sauce. stir to coat evenly. (adjust the salt/soy level to your liking) spread in a single layer on a baking sheet, roast at 300 for 20 - 30 minutes, or until desired color.
Yum!

I like chopped roasted cashews in cookies, on top of vegetables and in salads.
