I received this recipe from a friend on another board years ago. She got it from a sweet little Indian lady that would make it every day for the yoga center where they both worked.
It's a very simple recipe and wide open to adjustments. You can pare it down, too, if you don't have a 10-12 quart stockpot.
When I make it (which isn't as often as I'd like) I keep it in one-gallon apple-juice jugs in my refrigerator. It keeps for a very long time, though I'm sure some of y'all won't let it last that long ;)
Chai from Nicket makes 8 qts
2 bags.....Green Tea 2 bags.....Darjeeling 1"...........Ginger 20..........Cloves 30..........Peppercorns 40..........Cardamom Seeds 3 sticks...Cinnamon
Brew tea in the 8 qts of water and discard. Add spices & bring to a boil. Simmer 2 hours.
