| Gluten-free, Dairy-free, Soy-free. Oh my. |

This is what I face when I invite my son and daughter-in-law to dinner.
She finds this diet to help with her crippling rheumatoid arthritis, and my son is a bit lactose-intolerant, and goes along with the rest of her diet to please her.
I can find a number of gluten-free recipes on the web and a number of gluten-free items in my grocery --- but all three? Yikes.
I'm not an inventive cook in the least! What to do?

I eat exactly this way and it's not as limiting as you'd think. The list of stuff you can use is very much larger than the list of stuff to leave out.
You're limited to:
All whole meats (fish, poultry, beef, pork )
All veggies, including potatoes
Legumes except soybeans
All fruits
All nuts
Plant oils
Vinegars
Citrus juices
Rice and quinoa are great if you gotta have grain.

Almond milk, creams made from cashews and/or almonds. Also coconut cream, though I don't think coconut is technically a nut. These really help for both dairy-free and soy-free.
What were you thinking of making? Whatever it is, there's probably a way.
On edit, just to give an example:
Let's say you're making a pasta dish with a cream sauce. Get gluten-free pasta, which is thankfully more easily found these days. Then replace the cream in the recipe with a blended mixture of one part cashews to one part water.
Or if you want to do a soy-free vegetarian burger, blend a legume (beans, lentils) with nuts, egg, spices and breadcrumbs.

Salad on the side. Easy.
On edit: baked apples stuffed with brown sugar, raisins and nuts for dessert.

They can't eat nuts either. My son is highly allergic.

For replacing dairy products. For example rice milk, coconut cream, mock parmesan made from tahini (sesame seeds, nutritional yeast, onion and garlic powder).
Unless they're allergic to one of these too.

if you can find it, Polenta with tomato sauce can be really good too.
That said, I am not kidding... chicken green enchiladas with a side of beans and rice will be filling, and fits all their needs.
This is easy to do
Shredded cooked chicken, CORN tortillas, Herdez green chili sauce, it is not that spicy, rice cooked with cilantro, onion and salt on chicken stock, and a can of beans. You are set.
