Need yummy veggie side dish ideas.
We eat a lot of veggies and I'm getting bored with sautee and add to rice or pasta, or cook with protein (do a lot of "one pot" stuff). I have mushrooms, bell peppers (red and green), zucs, red onion and toms. What's something I can do that's fairly simple? I'm not a novice at cooking, but during the week I like to keep things fast and easy. Main dish tonight is lemon chicken. Any and all ideas appreciated! :hi:

1. I would make a stew
Just brown the onion a bit then throw in the peppers and mushrooms, then zucs and tomatoes. Throw a lot of garlic in and salt and pepper. Cover it and let it stew on low or even throw it in the oven for a while. It will taste even better tomorrow. Like Ratatoille without the eggplant

And would be great with your chicken.

Veggie stews are terrific and are often better the next day.

Another dish you can make and keep for leftovers is Saag. I usually make enough for three meals every week

This will give you basic technique...but it is a very forgiving dish. Add what you like. I add different greens to the spinach (like chard or mustard greens) and add more red pepper and garlic. I also don't add any dairy and it's still rich and creamy. I serve this with brown basmati rice or over potatoes.

6. Easy pepper side dish:
Slice peppers into strips. Toss in a bowl w/olive oil, S&P and finely chopped garlic (I use a garlic press for this). Let marinate for 10-15 minutes. Pre-heat oven to 350. Spread peppers on a foil-covered baking sheet (don't skip the foil or you will have a massive cleaning job on your hands!) and roast them until their edges start to brown.

You can also roast mushrooms and onions in a similar way and zucchini/tomatoes too (easier if you do halves instead of slices w/zux and toms, so they don't get too mushy. :hi:

7. to deal with your current stash of veggies...
...one of our favorite dishes is this:

1.saute chopped onion and bell pepper in a bit of butter

2.slice summer squash and blanch in boiling water

3.mix some mayo, grated parm and one egg together

4.mix it all up in a bowl, and turn into a baking dish

5.bake until bubbly and turning lightly browned

You can top with buttered crumbs if you like.

You can make any kind of a quiche with veggies, cheese, egg and milk. You can even make a crustless quiche. You can make a fritatta, or a tomato tart. All easy to prepare, delicious, and nutritious.

8. Another easy way to add veggies
Make a veggie mash. Mash equal parts cauliflower with potatoes. You can even add parsnips. My family now likes this better than plain mashed potatoes and it's so much healthier.

Also roasting veggies is always a great alternative.

Try roasted Brussels sprouts or asparagus. But- My favorite is roasted butternut squash sprinkled with course salt and cinnamon. If you cut the squash in little cubes they are absolutely addictive.

9. Do you grill?
Olive oil + salt + almost any vegetable + time on the grill until grill marks show = really good

No need to do more than just get grill marks on most vegetables. Potatoes are an exception. We slice them about 1/2 to 3/4 inch think, nuke them for half the time of a baked potato, oil and add some meat rub to them and then grill until done.

10. How about cabbage?
Hot, buttered with a glob of horseradish. Goes with everything and is a colon buster to boot.
