I'm making two types of tomato sauce (roasted and tomato-basil) and a double batch of tomato soup right now. And canning them for the winter.
Had to. My farmers' market was selling "ripe" tomatoes at 6 lbs for $1.00. Not kidding you. So I had to buy two bags.
And nothing wrong at all with the tomatoes. Not over-ripe or rotting. If anything, just the perfect shade of red. Mostly plum with some regular Jersey tomatoes.
