Pickle Soup
I had this for the first time yesterday. We attended our local Polish Society Sunday dinner and this was on the menu along with some pretty amazing sweet cheese pirogi. I have finally found "THE" pierogi connection in Seattle...:applause:

Anywhoo.....Pickle Soup...Who would have thought???

This link gets great reviews so I'm eager to try it now.

But speaking of pirogi's. My boss at my last job would make home made cheese pirogi's and mashed potato pirogi's and give them to me as a Christmas gift. They were marvelous.

And I used to make a Polish recipe that used pot roast, and I know there was a dill pickle sauce. The roast/sauce was to die for. Now I'm going to have to go hunt that recipe down. ;-)

3. I tried it at the Polish dinner
It was so excellent I looked for a recipe. It has a creaminess to it which was unexpected and although the pickle taste is clearly there it is also a very mild and soothing soup. I read that you can sub out the milk for soy and now I just have to figure out if I can use flax for the egg to make it vegan.

4. The concept of a dill pickle soup
Could be tweaked, omitting the potato, flour and egg, to make a fabulous cold, spiced soup for summer. I might give it a go and post the results when.....
