And apparently there are some pretty big differences between 10.04 and 11.04. Have you tried what is described at this link: http://www.myapitips.com/2011/06/10/how-to-change-monitor-resolution-in-ubuntu-11-04/

Apparently I have to create a custom modeline for the resolution I want. Ack.
Does anyone know how to do this properly?

Using the dedicated PC port on my TV worked wonders (!). I'm now running Windows and Ubuntu both in native 1920x1080 resolution.
My only question at this point is HDCP. The port on the TV that I changed to is a VGA port, not an HDMI port. This bothers me.
