Surprising that no one responds.
Back in the stone ages of the Mac SE 30 I used to have "Performer" . I had a lot of fun with that.
I would imagine that any sequencing software would allow you to play multiple instruments simultaneously.

as far as I know, the newest version is in beta with OS 10.6.

Version 6 is out now. You can download the demo version for free to try out.
I'm thinking of getting it myself. It think it's excellent.
