We've got a Tascam 16 track that we use. Boy, does it make recording easier than the old multitrack casette days. I've got a 4 track minidisc recorder, too! I use that for song sketches, but with digital i can mult and ping-pong without any noticeable signal loss. That's so much better than doing a 10 track song on a 4 track cassette system even if it's operating at double speed.

I've got a Tascam MMT-8 digital 8-track myself. It only records in 16-bit, but that's more than enough for basic demos. It stores data on CompactFlash cards, and can run on 6 AA bateries, so it's very portable.
Also, I'm still a little hard-disc-recording phobic, and I like the "old fashioned" analog controls. Same goes w/ softsynths-- I first learned synthesis on early-80s analog stuff, and I still prefer 'knob-twiddling' to pointing and clicking.
