If they wanted to tick the fundies off, they should just answer "Blessed be" (Wiccan phrase)...and then giggle. (Okay, I'm bad, I know it!)
In Irish, the normal way of greeting someone is "Dia duit"--God with you. And the response is "God and Mary with you", altho it's not taken any more seriously than we take "Good-bye" to mean the original "God be with you".

Taken within the proper context, I can see how it may offend some, such as when a religiously zealous individual uses it in contempt for a non-believer, but how often does that really happen? Quite often, those who have wished me a "blessed day" are truly sincere about it. That's why I have no problem with the phrase.

You know where I most hear that phrase? At the homeless shelter, where I work and volunteer. Almost all the women say that to me when they leave for the day. Likewise, when I ask them how they are doing, most will say, "I'm blessed." I dare anyone on the other thread to mock or question that.
And needless to say, it puts a LOT in perspective for me.
The trouble is, on the other boards, they can't tell the difference between sincerity and insincerity as it concerns religion; it's easier just to lump everybody under one category and take it from there. I find it quite sad.
