I bought a book about a week ago called Anime Explosion! The What? Why? & Wow! of Japanese Animation. I don't know a lot about the history or techniques of Japanese anime and this book is a good introduction. It goes through a short history of anime and then goes into the cultural aspects that Westerners might not "get" when watching anime. The second half of the book is a look at specific studios and their movies/series.
It's very interesting and informative for a guy that grew up on Disney movies and Saturday morning cartoons. One interesting aspect is that early anime was heavily influenced by Disney and now you can see the influence of anime in some of Disney's more recent features, specifically Lilo and Stitch.

feel free to ask them here. I've been out of the field for a few years, and am just getting back into it again myself, so I'm not sure that I can help much. However, there's plenty of others here that can.
Things are a little slow right now, but they're slow everywhere at DU because of the holidays, so it might take a bit to get an answer.
